Mayonnaise was invented in 1756 by the French chef of the Duc de Richelieu. The basic ingredients are oil, egg yolks, lemon juice or vinegar, and seasonings.

To make mayonnnaise, you combine lemon juice or vinegar with egg yolk. The eggs will bind the ingredients together and prevent separation. As the oil is added drop by drop, the mixture is whisked rapidly. As the sauce begins to thicken, the oil can be added more quickly. The seasonings are then added and whisked in.

Homemade mayonnaise can last around 3 days when refrigerated, commercial mayonnaise, about 6 months. You will find it used to make other sauces such as tartar sauce.
