YOU TAKE YOUR MASHED POTATOES AND ADD A LITTLE MILK AND ENOUGH FLOUR
TO MAKE THEM STICK TOGETHER. PUT ENOUGH OIL IN YOU SKILLET. MAKE SURE
YOUR OIL IS HOT BEFORE YOU PUT YOUR POTATO CAKES IN THE SKILLET OR THEY MIGHT STICK. LET THEM GET A GOOD GOLDEN CRUST ON ONE SIDE BEFORE YOU TURN THEM SO THEY WON'T TEAR UP ON YOU. ALSO, TURN YOUR HEAT ON MEDIUM SO THEY DON'T
BURN BEFORE THEY GET DONE ALL THE WAY THRU.

POTATO PANCAKES

To make a dozen, grate 6 large potatoes coarsely into a bowl of water. Drain when you are ready to fry the pancakes, and squeeze as much moisture out by putting them in a towel. Beat 2 eggs and add 2 tablespoons flour, 1/4 teaspoon baking powder and 1 1/4 teaspoon salt.

Add flour mixture to the potato along with 1 teaspoon grated onion. Fry the batter by spoonfuls in about 1/4 inch hot fat, turn and brown the other side.

Well, this does seem to be right.

However my mother used make "Potate Cakes" - similar to a pancake - but not quite.

Just take left over (or kept over on purpose) mashed potatoes that have been in the refrigerator over night. Grab a hand full - shape into a pattie - nice and thick - about 2 inches thick - slap in a preheated Teflon fry pan and cook until a crispy brown on each side.

They are great and tasty. You can add salt - pepper - or any favorite spices.
