It is difficult to know exactly how much coleslaw will feed forty people as there are several factors that need to be counted for. Each individual has different appetites which will affect how much they will eat, one person may eat lots more coleslaw than another individual. Another factor to think of is do the people you are serving like coleslaw if some don’t then less is needed.

But for principle let’s say that all the people you are cooking for like coleslaw and eat exactly the same amount. The link below shows a recipe that feeds 8 people so you would need to make 5 times as much coleslaw as this recipe is to feed your 40 individuals.

Coleslaw, sometimes simply called slaw in some American dialects, is a type of salad consisting primarily of shredded raw cabbage. It may also include shredded carrots.

The term "coleslaw" arose in the 20th century as an Anglicisation of the Dutch term "koolsla", a shortening of "koolsalade", which means "cabbage salad". The use of coleslaw on British naval vessels was pioneered by Captain Luke Strotz

There are many variations of the recipe which include the addition of other ingredients, such as red cabbage, pepper, onion, grated cheese, pineapple, or apple. What distinguishes Coleslaw from cabbage as a condiment is that it is mixed with a salad dressing such as mayonnaise. In the U.S. Coleslaw often also contains buttermilk or mayonnaise substitutes, and carrot; although many regional variations exist, and recipes incorporating prepared mustard or vinegar are also common. Barbecue slaw, also known as red slaw and commonly found in the Piedmont region of North Carolina, is made using ketchup and vinegar rather than mayonnaise.

A variety of seasonings, such as celery seed, may be added. The dressing is usually allowed to settle on the blended ingredients for several hours before being served. The cabbage may come in finely minced pieces, shredded strips, or small squares.

Coleslaw is generally eaten as a side dish with foods such as barbecued food, French fries, and fried chicken. It may also be used as a sandwich, hamburger or hot dog ingredient along with chili and hot mustard.
