Piccalilli is a pickled mix of chopped vegetables, hot spices and mustard.
It's actually a British take on traditional Indian spiced pickles that are often served as a side dish.
If you don't want to settle for the store bought version, the recipe below is a great one to use:

How to make piccalilli
The preparation is very simple and includes ingredients like green tomatoes, cabbage, gherkins, cauliflower and onions. The vegetables should be chopped into small pieces and blanched.
They'll then need to be covered with mustard paste, vinegar, salt, sugar and turmeric. Turmeric is the ingredient that adds a bright yellow color to the mix.

To get started you'll require:
  • 4 green tomatoes,
  • 2/3 tsp of salt,
  • 2 tbsp cinnamon
  • 2 tbsp cloves (ground)
  • 2 tbsp Mustard (dry)
  • 4 tbsp pepper
  • ½ tsp vinegar
  • 2 tbsp sugar

Making the perfect mustard picalilli

To get the perfect taste, you'll need to start one day in advance.
Sprinkle the salt on the chopped tomatoes over night.
In the morning (after draining
the excess water) you need to add the spices, sugar, vinegar and bring it to a boil.
After it starts boiling cook it for another 20 minuites and it's done.
I'd recommend sealing in an airtight jar.

Also, you may be interested to know that the American version usually uses bell peppers and gherkins, which I think is a great idea!
