I'd probably sear-fry it (I'm a bit of a hygiene freak when it comes to pork) then put it together with prawns and pasta in a carbonara sauce (I cheat with that bit and go and buy it at Morrisons) - Bake for about 25 minutes at 120 degrees.
I would add it to my fried rice.
I would thro it in a stir fry,
I generally casserole it with onions and vegetables and a cider based sauce .
If it's diced I would fry it with some cubed beef, once cooked thoroughly I would add some chicken rice soup, soy sauce, bean sprouts, water chestnuts and bamboo shoots - into a soup or somewhat of a chow mein
