Ratatouille is a stewed vegetable dish (from France) and can be eaten on its own alongside French bread, potatoes or rice. It can also be served as a side dish.

The key ingredients for ratatouille are courgettes, onions, egg plant (aubergine), herbs (sometimes basil), and peppers. All the ingredients are cooked together in a pan, in olive oil. It is better to make ratatouille the day before you serve it.

Ratatouille can be made in many ways. For a really quick way to make ratatouille you will need 1 aubergine (sliced), salt, 2 tablespoons olive oil, 1 sliced onion, 2 thickly-sliced courgettes, 1 red pepper and one green pepper (both sliced), 1 clove crushed garlic, 1 tablespoon fresh chopped parsley, a 14oz tin of chopped tomatoes and ground black pepper. Place the aubergines, oil and onion in a microwaveable dish and cook on high for 3 minutes. Add the garlic, peppers and courgettes and cook for 2 minutes. Finally, add the parsley and tomatoes and cook for 6-7 minutes. Remove the dish and stir twice during the last few minutes. Add seasoning if you wish.
