There are a quite a lot of foods which are high in Vitamin K and that is why it is quite hard to ever have a deficiency in it.

The vegetables which tend to contain a lot of Vitamin K include Avocado, Brussels sprouts, Broccoli and Cabbage as well as Green Onions. Some meat also contains high levels of Vitamin K and these include Pork and Beef Liver. If you love your leafy greens then you will be pleased to know that all of them are high in Vitamin K and so they include Iceberg Lettuce, Parsley, Spinach, Kale and other green leaf lettuces.

You can also find Vitamin K in some accompaniments including Mayonnaise and Soybean oil. So because it is in such a wide variety of foods, you should have no problem getting it into the body.

Vitamin K, I assume you already know, promotes blood coagulation. Green, leafy vegetables like lettuce and spinach are good sources of vitamin K. Other vegetables like kale, cabbage, Brussels sprouts, broccoli, and cauliflower are also sources of the vitamin, Other than vegetables, organ meats, wheat bran, cereals and fuits like kiwifruit, avocado, and bananas are also on the list. Meat, cow milk, butter, eggs and cheeses contain vitamin K as well. You really have quite a variety of foods to choose from.

Vitamin K basically is fat-soluble vitamin, and is absorbed most successfully when consumed with dietary fat. Food stuffs that have considerable amount of Vitamin K in them are beef liver, green tea, turnip greens, broccoli, kale, spinach, cabbage, asparagus, dark green lettuce, etc.

In general Vitamin K signifies a set of lipophilic and hydrophobic vitamins which are necessary for the post translational modification of some proteins. Vitamin K is occupied in the carboxylation of some glutamate filtrates in proteins to create gamma-carboxyglutamate residues.

Vitamin K is also vital for the proper application of calcium in bones. High vitamin K level results in stronger bones, where as low levels of vitamin K result in osteoporosis. During a snake bite the poison of the snake works by destroying vitamin K, and hence the body's ability to clot blood is lost.
