There are varied recipes to make sponge cakes. For a simple, easy to make sponge cake, you will need to oil an 8" square tin (actually, any shape will do). Your oven should be preheated to 180C/360F. Mix together self raising flour (300g/12oz/2 cups), bicarbonate of soda (1 tsp), sugar (100g/4oz/half a cup). Create a little space in the middle of the mixture and pour in sunflower oil (1 cup/8 fl.oz/200ml), Soya milk (1 cup or more). Optionally you can add natural vanilla extract (2 tsp).
Pour this mixture into your cake tin. You can then bake the same for approximately half an hour or until it gets cooked in the middle. To test it, you can poke a skewer or knife and see if it comes out clean. Optional variations to this basic cake include topping with chocolate chips just before baking; mixing in chopped nuts or dried fruit or even adding some mashed banana while mixing.
