They aren't that bad, actually...depending on the amount of them U eat at one sitting...& what U eat them with. They're better if U don't let them soak in oil, of course. An' as long as your watching the amt. Your eating, U can still get away with having some, even if your Diabetic. Just limit them to no more than10 fries per sitting & you'll be okay. Potatoes in & of themselves are "good" carbs. Or carbs that burn off slowly. These will not cause a spike in sugar levels as other foods might. My nutritionist advised me to eat mine, even before I ate my steak at dinnertime.. I used to leave it 'til last, & only eat half. I was wrong. She said to eat ALL of it...& first..Surprised ? I was.
I don't think they are ever the healthiest way to eat a potato but there are ways to make them just slightly better.... Instead of putting them in oil to cook them, try boiling them for a bit to soften them up. Stick them in the oven with a little olive oil to get them golden brown and crunchy.
Also leave on the skins because I have heard there are nutrients in the skin. Not sure if the preparation will eliminate them or not :)

Well french fries are loaded with vitamin c, enough for a daily supplement.

In moderation not bad......one should limit the amount of foods fried in vegetable oil but as long as it is not everyday it is not unhealthy in most cases. Wjthunder1 has the best news Vitamin C. Scurvy was a big problem during the Irish potato famine.

A limited amount of potatoes are OK. It's basically the way they are cooked that is the problem. A baked potato is better for you health wise, than is fried. Scalloped potatoes eaten in the same amounts is better yet due to the addition of milk & cheese. According to my husband's diabetic dietician, a sweet potato is better for you than a white. Have you tried fried sweet potatoes? They are surprisingly good.

I do not think they are that unhealthy. It depends how often you eat them and how they are prepared. I mean if you cut your own fries from the potato then bake them in the oven...it would be a healthier choice then cooking them in oil. It also depends how you eat them (like what do you put on them?) I know a lot of people add so much crazy stuff to their fries.
